KANDAGADDA/CHAMAGADDA PULUSU:
.Pulusu is a stew that can be made with different vegetables or seafood and is a very
common dish in the coastal regions of Andhra Pradesh. Vegetables are cooked in spicy
and tangy tamarind juice.
.Optional ingredients that can be used to make a pulusu are jaggery, coriander and
cumin powder add rice flour to thicken the stew, You can mix 1 tsp rice flour in
few tbsps Of water and add to the boiling pulusu.
.kanda gadda pulusu is served with plain steamed rice or can be served with chapathi too.
You can use drumsticks or brinjal with kanda gadda to make this pulusu.
.Simple andhra style kanda stew that tastes tangy, hot and sweet.
This recipe is very versatile,you can prepare in two ways like hot and sweet ,cooking process is same for both the recipes increase the quantity of jaggery for sweet kanda pulusu.
INGREDIENTS:
Ingredients (240 ml cup used)
1 1/2 cups of boiled kanda gadda cubes
1/2 cup onion chopped
1/2 cup tomato chopped
1 green chili
1 sprig curry leaves
1 tsp red chili powder
1/4 tsp turmeric powder
Salt to taste
Jaggery as needed
Small lemon sized tamarind
1 tbs rice flour (Optional)
3/4 tsp. Coriander powder
1/2 tsp. cumin / jeera powder
1/2 tsp mustard
1/2 tsp cumin
1/4 tsp methi/menthulu/fenugreek seeds
2 tbsp. oil
METHOD:
Step1
pressure cook chamadumpa for one whistle in a cooker,peel and chop them cubes.
Step2
Heat oil in a wide and deep pan, add mustard, cumin and methi When they begin to crackle,
add curry leaves, green chilies, and onions. Fry till they turn lightly golden.
Step3
Add cooked chamadumpa, tomato,red chili powder, coriander, cumin powder, turmeric and salt, mix
well and fry for 2 minutes on a high flame.
Step4
Pour the tamarind juice,1 cup water,jaggery Mix well and allow to cook on a medium low flame for about 5 to 7 minutes. this is the time to add rice flour take a bowl add rice flour,little water mix well and pour the rice batter mix well and allow it to cook for 5 minutes and switch off the flame.
Now your dish is ready finally Garnish with coriander leaves.
This dish is very Simple south indian style kanda stew that tastes tangy, hot and sweet.
Serve with rice or chapathi.
