Alasansda vada recipe: Black eyed pea are called as Lobia in hindhi , alasandalu or Bobbarlu in telugu,Alasandhi in kannada and so on.They are well know as health food,since they are low in fat and calories,high in the protein and fiber. Alasanda vada is one off the popular crispy snack that is prepared specially during the festival sankranthi all over andhra pradesh and is street food too.
Lobia or Alasandalu are used to make lobia curry or a biryani or pulao.Treditionally alasanda vada is served with chicken curry. For vegetarians a coconut chutney/tomato chutney are taste grate as well.
A simple alasanda vada recipe:

INGREDIENTS:
2 cups of socked Lobia/Alasandalu/Black eyed peas
1/2 cup finely chopped Onion
8 finely chopped Green chilly
2 spring finely chopped Curry leaves
1/4 cup finely chopped Coriander leaves
2 tbs Cumin seeds
1/4 tbs Turmeric powder(optional)
2 tbs Rice flour(optional)
oil for Deep fry
A STEP BY STEP PHOTOS HOW TO MAKE ALASANDA VADA RECIPE:
.Wash & sock alasandalu/lobia for 4-6 hours. drain water throughly. Grind half of Lobia to a semi
.Make sure there are no left over whole alasandalu they can burst while frying.if u opt for deep frying.
.Now add onion,green chilly,coriander leaves,curry leaves,turmeric powder,cumin seeds and grinded lobia mix well if required add rice flour.
.For deep frying heat oil till it hot,medium the flame and fry these vada/ patties evenly by flip them to both the sides.do not crowed your fry pan.fry these till you fell they cooked fully,usually a medium flame and cooked 3-4 mins will be perfect for me, this depends on your size of the vada. if u try this in a high flame they can browned fast with out being cooked inside.Once fried properly,drain them on a kitchen tissue.to keep them crispy for long time re fry them for a minute( not deep fry).
.Now your tasty alasanda vada is ready ,you can serve with chicken/ coconut chutney /even you can eat this as a snack.
