Stuffed bitter gourd fry | How to make gutti kakarakaya | Andhra stuffed kakarakaya recipe


Stuffed kakarakaya fry recipe: Sharing a simple stuffed bitter guard recipe made south indian style. this goes very well with plain rice and ghee or as side with rasam rice,sambar rice and curd rice.bitter guard is said to be one of the veggies that regulates blood sugar levels so it is good to use them occasionally. This bitter guard recipe is from my mum,very simple to make and turns out to be very good. If your one who does not like the flavor  of bitter guard then this is a must try recipe. The flavor of garlic,onion,cumin powder  makes the kakarakaya  taste delicious.

A simple stuffed bitter gourd recipe:

INGREDIENTS:

4 number /250 grams bitter gourd
1 big size chopped onion
5 garlic cloves
2 tbs cumin powder
2 tbs roasted chana dal powder
1/4 tbs turmeric powder
1 1/2 tbs red chilly powder
salt to taste
oil
mustard seeds,cumin seeds,chana dal,urad dal -2 tbs
 


A STEP BY STEP PHOTOS TO MAKE ANDHRA STUFFED KARELA FRY:

.Clean and wash kakarakaya  with water and dry them with clean cotton cloth.Slit that kakarakaya  from one side and remove seeds.


.For deep frying kakarakaya heat oil till its get hot add slit kakarakaya peaces,flip them to both  sides and cook them till karela little brown.



.Heat 1 tbs oil in a pan add chopped onion,garlic,cumin seeds and saute till onion little transparent.  Cool down the mixture.And take a mixi jar add boiled onion mixture,red chilly powder,salt,turmeric  powder,chana dal powder and make little course paste.





.Take deep fried kakarakaya peaces and stuff the griended onion paste on it.


 .Now heat 2 tbs oil in a pan add mustard seeds,cumin seeds let them splutter add chana dal,urad dal
 saute till they turn golden brown and add removed kakarakaya seeds and cook they gets crisp.



 .And add stuffed kakarakaya place the lid and fry in a slow flame for 5 minutes them add left over       onion paste in a middle of the pan as i showed in the below picture place the lid and slow cook it for   3 minutes.


.Now your tasty and yummy stuffed bitter guard fry is ready to serve with chapathi and with rice as a side  dish.
