Tindora vepudu | How to make dondakaya kobbari karam | Ivy gourd coconut fry recipe

Tindora vepudu recipe: A semi dry curry that goes very well with roti or plain rice.Ivy gourd or dondakaya are used to make chutney or curry in andhra homes most times i make a stir fry/ vepudu with out addition of onion or tomatoes.But flavored with coconut and peanut powder.That goes good with plain rice,sambar or rasam. The curry i am sharing today had with chapathi as well.


The ivy gourd is well known for its laxative properties and for its ability to normalize the blood sugar levels.Hence suitable for all including diabetics.

A simple Ivy gourd fry recipe:

INGREDIENTS:

Tindora/Dondakayalu - 1/2 kg /1
Onions - 2 medium size chopped
Green chilly - 5
Coriander leaves
Salt to taste
Peanuts - 3 tbs
Coconut powder -2 tbs
Dry red chilly - 3
Garlic cloves - 4
Oil
Tempering: mustard seeds,cumin seeds,chanadal,urad dal-2 tbs
Dry red chilly -2
Curry leaves-1 spring


STEP BY STEP PHOTOS TO MAKE TINDORA FRY RECIPE:

.Wash tindora and cut them into length wise.
.Dry roast peanuts cool down.Take a mixi jar add peanuts,dry red chilies,coconut powder,garlic    cloves and blend it to little course powder.




 .Heat oil in a wide pan add temparing saute for 2 minutes then add onion,green chilly and curry           leaves saute till the onion transparent .



.Then add tindora peaces mix well in a medium flame cook till tindora gets soft.add salt and turmeric   powder mix well after 2 minutes add course powder of peanuts,dry red chilly,coconut powder,garlic   cloves mix well in a low flame cook it for 3 minutes.




 .Finally garnish with cilantro.
 .Now your tasty tindora coconut fry is ready to serve with rice or chapathi
