Spiced vegetable biryani:  A Classic Indian vegetable biryani is a perfect dish for any occasion. Long grain basmati rice and assorted vegetables in a spicy masala are cooked in alternate layers under dum to give you a final dish that is a treat to your all of your senses. Whole spices, fragrant rice, nutritious veggies and the aromatic saffron blend together perfectly in this vegetable
biryani recipe.                                                                                      
                                                                             

A simple vegetable biryani  recipe:

INGREDIENTS:  

4 cups basmathi rice                                                                        
1 packet biryani masala / home mad fresh biryani masala 2 tbs
100 grams carrots /2 carrots long
100 grams potatoes / 3 potatoes
100 grams beans
100 grams cauliflower
100 grams green peas
200 grams curds / 1 cup
40 grams fried onions
1 tbsp ginger garlic paste
3 number gr chilly sliced
40 grams mint
1/2  bunch cilantro
100 ml oil
1 to taste salt
1/4 tbs saffron
4 small glass  milk





Whole garam masala:

 10 green cardamom
12 cloves
2 cinnamon sticks
3 bay leaf
1/2  tbs jeera
1/2 tbs black cumin
2 javitri

STEP BY STEP PHOTOS TO MAKE SOUTH INDIAN VEGETABLE BIRYANI RECIPE:
.To day i am using dried green peas ,sock peas for an hour and pressure cook till u get 1 whistle.



.Take a pan add oil,garam masala,saute it  for 2 minutes add ginger garlic paste saute till raw flavo r  is gone .

.Add vegetables cut little bit long size mix well and add salt,need to cook till they are half cooked.



.Now add mint,coriander,green chilies cook it for 2 minutes then add biryani masala powder mixwell.


 .After 2 minutes add half cup curd cook till the vegetables gets soft.(75% )


.Wash and soak rice for 1/2 hr in a bowl.



.Now boil water,with 2 tbs oil and 1 bay leaf,4 cloves,2 cardamom add rice to it,the rice to be cooked  half (70%) and strain the rice.




.Take a biryani bowl add cooked vegetables,green peas,fried onion spread all over the pan add some    nuts if  required,salt,fried onions,add half rice,repeat the same process again.Lastly add fried  onions,mint.coriander leaves close it with a lid,and cook it for 5 min in a very slow flame.




.Now your tasty vegetable biryani restaurant style is ready to serve hot with raitha.
