BRINJAL PICKLE



INGREDIENTS:

1 cup Brinjal peaces
1/2 cup Tomato peaces
1/4 cup Onion chopped
5 Garlic cloves
10 Green chillies
1 tbs Cumin seeds
2 tbs Ground nuts
Turmeric powder  
Cilantro
Salt to taste
Oil
Tadka-red chilly, mustard seeds,cumin seeds,black gram,
bengal gram,hing,curry leaves.

HOW TO PREPARE:

  1.In a pan heat oil then, add ground nuts and saute them.
  2.Keep this aside and again in the same pan, add oil,gre
    en chilly,cumin seeds,brinjal,tomato,onion and cook
    it for few minutes then switch off the flame and let it
    cool down.
  3.In a blender blend groundnuts,green chilly,cooked brinjal,
    tomato,onion peaces,garlic cloves,cumin seeds,salt and
    make a coarse paste.
  4.For tempering heat oil in a pan,add black gram, bengal
    gram, mustard seeds, cumin seeds and saute it.
  5.Add curry leaves, asafoetida and add the brinjal mixture.
  6.Mix thoroughly and cook it for another 5 minutes then
    switch off the flame.
  7.Tasty chutney is ready to serve with rice and chapati.
