A simple carrot rice recipe:

INGREDIENTS:(240 ml cup used)
1 cup rice (uncooked rice)
2 tbs oil
Spices( or mustard,cumin,urad dal,curry leaves)
1 small bay leaf(optional)
2 cloves
1 cinnamon stick
2 cardamom
1/2 tbs shahi
Other Ingredients:
1 small onion chopped
2 green chilly chopped
1/2 tbs ginger garlic paste
1 spring curry leaves
8 cashew nuts
Hand full of coriander leaves
1 tbs red chilly powder
1/4 tbs pepper powder
1/2 tbs coriander powder
1/4 tbs turmeric powder
Salt to taste
STEP BY STEP PHOTOS TO MAKE CARROT RICE RECIPE:
.Heat oil in a pan saute if using cashew nuts golden fry them and set aside.dry spices i used cinnamon stick,cloves,cardamom,shahi jeera. you can also replace them with mustard seeds,cumin seeds and urad dal i have made several times.That way to,the rice has more of curry leaves flavor.
.Add chopped garlic cloves and green chilly saute for 2 minutes and add frayed cashew nuts.
.Add chopped or sliced onions , ginger garlic paste fry untill raw smell is gone.
.Add curry leaves,red chilly powder,pepper powder,salt saute for a minute add grated or finely chopped carrots and chopped for a while.If using green peas or corn you can add them now,if using corn from the cob they need to be boiled first untill tender and then use here.If using peas and corn just rinse them and use.
.Add coriander powder and coriander powder mix well after 2 minutes of cooking add boiled rice in a low flame cook it for 4 minutes.
.Now your tasty carrot rice is ready to serve hot.
