Onion sambar recipe:Onion Sambar is a very popular South Indian sambar. It goes well with rice and most South Indian tiffins (breakfast) items like idli, dosa, vada, upma ,rice,etc.
A simple shallot sambar recipe:

INGREDIENTS:(240 ml cup used)
Toor dal(1/2),chana dal(1/2) - 1 cup
Tomatoes (chopped) 2
Water 2 cup
Onions (chopped) 1 cup
green chilies 4
Carrot (pieces) 1/2 cup
Shallots (small onions) 1 cup
Brinjal (peaces) 1/2 cup
Turmeric 3 pinch
Salt to taste
Tamarind pulp 5 tbsp
Sugar/jaggery 2 pinch
Coriander leaves (chopped) 1/2 bunch
Oil 4 tbsp
Methi seeds 1 pinch
Mustard seeds 1/2 tbsp
Cumin seeds 1/2 tbs
Chana dal 1 tbs
Dry red chilly 2
Curry leaves 2 springs
Sambar powder:
Coriander seeds 2 tbsp
Fenugreek seeds ½ tbsp
Rice ½ tbsp
Peppercorns 8-10 nos
Red chilies 3 nos
A STEP BY STEP PHOTOS TO MAKE SHALLOTS SALAD:
. Cook toor dal ,chana dal,tomatoes with water and mash boiled dal.
. In a hot pan add coriander seeds, fenugreek seeds, rice, peppercorns, red chilies and roast it
nicely.And make a fine powder.
. In a pan heat oil add methi seeds, mustard seeds,cumin seeds let them splutter add chana dal,red chilly,curry leaves saute till they turn brown.
.Now add green chilies,carrots and saute for 2 minutes then add brinjal saute for 2 minutes
and add onion,shallots,green chilly and saute it for 3 minutes.
.Then add boiled and mashed dal,salt,tamarind water,redchilly powder,turmeric powder cover it and cook for 8-10 minutes and add sambar powder in a slow flame cook it for 10 minutes.
. Simmer it then and lastly add sugar/jaggery, coriander leaves.
. Now your tasty small onion sambar is ready to serve with rice.
