Mix vegetable kurma | How to make vegetable kurma | South indian mixed vagetable subji recipe



 Mix vegetable kurma recipe – Mixed vegetable korma is south indian dish, it is a aromatic and spicy curry, made with mix vegetables. kurma or korma is a curry made using veggies or meat along with yogurt, coconut, spices and nut or seed paste. Based on the regions, the ingredients used to make a korma recipe are different.
 I am sharing a South Indian hotel style veg kurma recipe that quick and easy to prepare.It pairs wonderful well with roti,puri,dosa,coconut rice,plain paratha,chapathi any variety rice like simple pulao. To make this recipe you can use carrots,beans,peas,potato and cauliflower.


A simple vegetable kurma  recipe:

INGREDIENTS:

Vegetable kurma paste:

Cashew nuts - 10
Poppy seeds - 3 tbs
coconut powder - 4 tbs
dry chana dal - 3 tbs

Dry roast/boil all ingredients add little water and grind  it to  a fine paste.

Other ingredients:

Cloves 3
Cinnamon 1 inch piece 2
Bay leaves 2
Cardamom 3
javitri 1
Cumin seeds 1/2 Teaspoons
Ginger garlic paste 1/2 Teaspoons
onion finely chopped -1
Tomato chopped - 2
Coriander powder 1 Teaspoons
Cumin powder 1/2 Teaspoons
Turmeric 1/4 Teaspoons
Red chilly powder 1/2 Teaspoons
Mint leaves finely chopped 1/2 Bunch
Mix vegetables (green peas, potatoes, broccoli, carrot) - 1 cup
Salt To taste

STEP BY STEP PHOTOS TO MAKE VEGETABLE KURMA RECIPE:

.Dry roast poppy seeds,cashew nuts,coconut,dry chana dal cool down.use a blender/mixi jar add  water and blend it to a fine paste.




.Now in a hot oil add whole garam masala cloves, cinnamon,bay leaves, cardamom, cumin seeds
 saute for a minute then add onion, ginger garlic paste, saute till raw flavor is gone.And add tomato,
green chilly  saute till tomato fully gets mashed.



.Now add blended paste saute till it woose out the oil add coriander powder, cumin powder, turmeric, red chilly powder,mint leaves  and cook it for 2 minutes.


  .Add all vegetables,little water mix them properly With the lid on let it cook till vegetables
  gets soft,When the oil starts floating on top switch off the flame.and garnish with cilantro.
 

.Now your tasty south indian  vegetable kurma  is ready to serve with chapathi,roti and puri.
